Encompassing three unique and organically farmed (uncertified) parcels across the Niagara Peninsula, this year's blend is made up of 9 parts Riesling and 1 part Chardonnay. The fruit spent an average of 14 days on skins, a gentle maceration more akin to steeping tea than the heavy extraction of other orange wines. By macerating the fruit at a cool temperature we gently infused floral aromatics, under ripe tropical fruits and preserved citrus into the profile. Lovely acidity creates a perfect structure for the light tannins, the freshness is a result of aging in both neutral French oak and stainless steel.
